3 CUPS FLOUR (SIFT)<>1 1/2 CUPS SUGAR<>1 TEASPOON CINNAMON<>1 TEASPOON SALT<>1 TEASPOON BAKING POWDER<>3/4 TEASPOON BAKING SODA<>2 CUPS (SHREDDED UNPEELED) GARDEN PICKED ZUCCHINI.<><>1 CUP CHOPPED NUTS<>1 CUP RAISINS<>3 EGGS<>1 CUP OIL<><>IN LARGE BOWL STIR, TOGETHER FLOUR, SUGAR, CINNAMON, SALT, BAKING POWDER, SODA, (ZUCCHINI) NUTS, AND RAISINS<>IN ANOTHER BOWL BEAT EGGS AND OIL.<>POUR OVER FLOUR MIXTURE AND STIR UNTIL MOISTENED.<>TURN INTO GREASED 9x5x3 inch LOAF PAN.<>(BAKE in 350 degreeF OVEN FOR 1 HOUR 30 minutes or until pick inserted in center comes out clean<>COOL IN PAN 10 minutes, invert on rack, TURN TOP SIDE UP AND COOL COMPLETELY.!!! (HEALTHY and DELICIOUSLY MOIST)!!!!!
