DEEP DISH PEACH ALMOND PIE






MAKES 8 SERVINGS<>1 lb. FRESH PEACHES, (BLANCHED , PEELED, AND PITTED)<>1/3 CUP SHELLED ALMONDS, GROUND FINE<>3 TBSP. SUGAR<>1 TBSP. CINNAMON<>1 CUP SUGAR<>1 CUP FLOUR<>1/2 CUP BUTTER<>1 EGG<>1 TSP. ALMOND EXTRACT<><>PREHEAT (OVEN TO 350 degreesF)<>THEN (CUT PEACHES INTO 1/2 INCH SLICES,) ARRANGE PEACHES IN A SPIRAL SHAPE (in a 9in PIE PAN, SET ASIDE)<>COMBINE ALMONDS IN A MIXING BOWL WITH 3 TBSPS. SUGAR AND CINNAMON, (SPRINKLE MIXTURE OVER PEACHES)<>USING AN ELECTRIC HAND MIXTURE, BEAT 1 CUP SUGAR, FLOUR, BUTTER, EGG, AND ALMOND EXTRACT, ON LOW SPEED UNTIL FLUFFY.<>SPREAD THIS BATTER OVER PEACHES, COVERING FRUIT COMPLETELY.
