SAVORY & EASY (POT ROAST)



POT ROAST<>SAVORY&GOOD<>4 to 5 lb. BOTTOM ROUND or CHUCK ROAST<>2 TABLESPOON SALT<>1/4 TEASPOON PEPPER<>1 TABLESPOON. PAPRIKA<>2 TABLESPOON. WESSON OIL<>1/2 CUP WATER<>10 small ONIONS<>10 small CARROTS, cut in half<>2 (8 ounce ) CANS TOMATO SAUCE<>TRIM excess fat from MEAT<>,sprinkle with SALT & PEPPER and PAPRIKA<>BROWN in OIL in DUTCH OVEN.<>ADD WATER and COVER put VEGETABLES around MEAT and POUR in TOMATO SAUCE<>(COVER and SIMMER until vegetables are DONE about 30 to 40 minutes.!!!  SAVORY & GOOD!!!!!

HOLIDAY PARTY (BOURBON BALLS)




BOURBON BALLS <>1 PKG. VANILLA WAFERS (CRUSHED 2 1/2 CUPS)<>1 CUP CONFECTIONER'S SUGAR<>3 TABLESPOON COCOA<>1 small PKG. PECANS or ALMONDS, (chopped fine<>3 TABLESPOONS (light CORN SYRUP)<>2/3 CUP BOURBON, WHISKEY or BRANDY (unflavored)<>MIX all DRY INGREDIENTS TOGETHER<>ADD (CORN SYRUP and BOURBON).<>SHAPE into BALLS and ROLL in (CONFECTIONER.S SUGAR<>LET SET 24 HOURS.<>If necessary, reshape and roll in sugar again<>make these BALLS several days before your (HOLIDAY PARTY so the BOURBON has a chance to blend with the other ingredients<>GREAT HOLIDAY TREAT!!  DELICIOUS!!!!!!

HAPPY HOUR PARTY (MARINATED CHICKEN WINGS)<>3 Ounce BOTTLE SOU SAUCE<>1 CUP ORANGE JUICE<>3 TABLESPOONS GARLIC SALT<>3-4 LBS. CHICKEN WINGS<>BRING first 3 INGREDIENTS to a BOIL, then SIMMER 10 minutes<>NOW (LET COOL) now POUR SAUCE OVER WINGS, Turning making sure WINGS get FULL COVERED in SAUCE<>LET sit for @ least 24 HOURS<>(BAKE @ 400 degrees F. for 45 MINUTES<> READY for Appetizers @ HAPPY HOUR!!!!!

TATER CRUST (TUNA PIE) taste of HOME!!





TATER CRUST TUNA PIE<>CRUST==1 CUP all-purpose FLOUR<>1/2 CUP instant (MASHED POTATO FLAKES)<>1/2 CUP BUTTER or MARGARINE<>3 to 4 TABLESPOONS ice WATER<>1 CAN (2.8 ounces) FRENCH-FRIED ONIONS, (divided)<><>now for (FILLING==1 EGG<>1 CAN (10-3/4 ounces CONDENSED CREAM OF (MUSHROOM SOUP =undiluted)<>1 CAN (6-1/2 OUNCES) TUNA, drained and FLAKED<>2 TABLESPOONS chopped stuffed green olives<>1 CUP (4 ounces) SHREDDED CHEDDAR CHEESE, divided<>3/4 CUP MASHED POTATO FLAKES<><>NOW in a medium BOWL, combine the FLOUR and POTATO FLAKES, cut in BUTTER until CRUMBLY<>ADD WATER, ( 1 tablespoon @ a TIME until DOUGH is moist enough to HOLD TOGETHER<>PRESS PASTRY over BOTTOM and up sides of UNGREASED 9 in or 10 in PIE PLATE<>FLUTE EDGES<>SET aside 1/2 CUP FRENCH-FRIED ONIONS<>SPRINKLE REMAINING )ONIONS into PASTRY SHELL)<>in another BOWL )COMBINE FILLING INGREDIENTS except 1/2 CUP of CHEESE<>SPOON FILLING over ONIONS<>then (BAKE @ 350 degrees F. for 25 to 30  MINUTES or until CRUST is GOLDEN<>SPRINKLE with RESERVED CHEESE and ONIONS.<>BAKE for ANOTHER 5 to 10 minutes or until CHEESE  is MELTED<>let STAND 5 minutes before cutting<>YIELD 6 to 8 servings<> DELICIOUS taste!!!!!!

WHAT MY UNCLE and AUNT would say, ABOUT FARMING!!!


HE would speak slowly, almost whisper like, SHE would say in a roar! HOW the HELL are YA! POLLY!! and OUR conversation would begin, HE'd say for SURE FARMING is HARD WORK, SHE replied !! NO one gets RICH doing this STUFF, UP @3am MILK do CHORES but SHE always saved UP for THEIR rainy DAYS!! THEN he'd reply well worked SOIL provides RICHES, so the COWS can GRAZE and it went on and on, the BASIC conversation, when I VISITED them with my mom, and took these PHOTOS and HEARD the WORDS, A part of ones LIFE now a MEMORY!!!

PINEAPPLE BACON (horsd' oeurvre)<>1 SMALL PINEAPPLE<>1/2 LB. BACON<<> CUT off CROWN and STEM LEAVES of END OF PINEAPPLE<>STAND PINEAPPLE upright and CUT off RIND in LENGTHWISE STRIPS<>REMOVE EYES with POINTED KNIFE<>CUT pineapple into LENGTHWISE QUARTERS and CUT away CORE<>CUT PINEAPPLE into LARGE CHUNKS<>CUT (BACON SLICES in HALF)<>WRAP (PIECE of BACON around each PINEAPPLE CHUNK, fasten with wooden tooth pick<>PLACE (BROILER RACK set 5 inches from HEAT<>BROIL until BROWNED, 5 to 8 minutes, TURN and BROIL until second SIDE is BROWNED and CRISP<>about 2 to 3 minutes<>MAKES about 32 hors d' oeurvres!!!!!!    DELICIOUS

FARM COUPLE

FARMERS for MANY YEARS, they were quiet, led a CALM LIFE, minded their OWN BUSINESS, HAD CHILDREN, and GRANDCHILDREN, and just WORKED THE FARM, SHE (DID CHORES and COOKED, and HELD THE FAMILY TOGETHER, HE spoke so silently you could HARDLY HEAR or UNDERSTAND HIM. (HE knew that his words could QUICKLY make a WALL) that's HOW it was on the FARM<> (JUST a FARM COUPLE)

PKG) PITTED DATES<>FRUIT SUGAR<>and now COMBINE (PEANUT BUTTER, ORANGE JUICE and RIND) now MIX THOROUGHLY, (USE the MIXTURE to STUFF DATES and ROLL LIGHTLY in SUGAR!! this is making NOEL" STUFFED DATES and Place on SERVING PLATTER or in COVERED GLASS BOWL!!!  DELICIOUS****

DOWN HOME (COUNTRY HAM) Real MAPLE SYRUP Glaze!!!





COUNTRY HAM<>REAL MAPLE SYRUP GLAZE!!!(1 COUNTRY HAM)<>1/2 CUP whole CLOVES<>1 FULL cup DK. BROWN SUGAR<>1 CUP VINEGAR<>1 CUP light BROWN SUGAR<>1 CUP CORN MEAL<>1 TBS. GROUND CLOVES<>1 TSP. CINNAMON<>1 CAN SLICED PINEAPPLE<> CHERRIES<>SCRUB HAM and SOAK in water overnight<.SPRINKLE some of the CLOVES on BOTTOM of (ROASTER and some on TOP pf the HAM<>ADD about one inch of water.<>PUT 1 CUP of BROWN SUGAR and VINEGAR AROUND HAM<>(COOK for 1 HOUR in a 375 degree F. OVEN<>then turn temperature down to 275 degree F. and COOK (20 MINUTES per POUND)<>REMOVE from ROASTER.<>MIX together (1 cup of BROWN SUGAR, corn meal, ground cloves and cinnamon,<>PUT SLICED PINEAPPLE & CHERRIES on HAM with toothpicks<>(SPRINKLE the HAM with MAPLE SYRUP& BROWN SUGAR GLAZE and BROWN in a 375 degree OVEN<> the sweet smell will WAFT through your KITCHEN!! and it will be soooo , SCRUMPTIOUS!!!!

WASSAIL WONDERS (HOLIDAY EGGNOG)!





HOLIDAY  EGGNOG<><>RECIPE or USE carton bottled EGGNOG and ADD some RUM<><>Here is my (RECIPE) 6 EGG YOLKS<>1/2 CUP GRANULATED SUGAR<>1 CUP ( BRANDY, RYE, WHISKEY , RUM or BOURBON) the spirit of your CHOICE<>and 1/3 CUP JAMAICA RUM<>6 EGG WHITES<>2 CUPS HEAVY CREAM,(WHIPPED) and about 2 1/2 CUPS MILK<>BEST EGG YOLKS with electric mixer or EGG BEATER until thick and lemon colored<>GRADUALLY BEST in SUGAR<><SLOWLY stir in BRANDY and RUM<>COVER and refrigerate.<>JUST before SERVING, (FOLD in STIFFLY BEATEN EGG WHITES, and WHIPPED CREAM and enough MILK to thin as DESIRED, (SOME people like it THICK, some like it THIN<>TO SERVE,(NUTMEG is the usual TOPPING but< for VARIETY, SPRINKLE with CINNAMON, SHAVED CHOCOLATE, CRYSTALLIZED GINGER or GRATED ORANGE RIND!! (THIS is my RECIPE) the CARTON EGGNOG @ HOLIDAY is QUICKER just ADD some RUM your CHOICE and FOLD IN WHIPPED TOPPING & NUTMEG!!!!!   sooooo, DELICIOUS either WAY!!!!!
