SOUR-CREAM FUDGE (CANDY DELIGHT)



2 CUPS GRANULATED SUGAR<>3/4 CUP COMMERCIAL SOUR CREAM<>1/2 TEASP. VANILLA EXTRACT<>1/2 CUP CHOPPED WALNUTS or PECANS or BUTTERNUTS<><>GREASE 8x8x2in PAN.<>IN 2 qt, SAUCE PAN, COMBINE SUGAR and SOUR CREAM, STIRRING WELL.<>STIR OVER LOW HEAT UNTIL SUGAR IS DISSOLVED, COVER ,BRING MIXTURE TO A BOIL. (BOIL 1 MIN., or until all sugar crystals on sides of PAN have MELTED.<>REMOVE COVER.<>(if using candy thermometer , set in place) CONTINUE COOKING, WITHOUT STIRRING, over gentle HEAT to 235 degreesF or until a little mixture in cold water forms soft balls) LET COOL without stirring or moving., to 110 degrees F or until outside of saucepan feels lukewarm to hand<>ADD VANILLA.<>WITH HEAVY SPOON (BEAT MIXTURE until it is very CREAMY and loses it's GLOSS) ABOUT 8 min<>ADD NUTS.<>POUR into GREASED PAN (CUT WHILE WARM)<>MAKES about 1 lb.<>   DELICIOUS, CREAM FUDGE!!!!!!!
