PASTA FAZUL (HEARTY ITALIAN PASTA and BEAN SOUP)
2 CANS (ITALIAN WHITE BEANS)<>2 CANS CHICKEN STOCK<>1/4 lb. or so HAM STEAK, CHOPPED into PIECES<>1/2 CUP CHOPPED ONION<>1/2 CUP CHOPPED CELERY<>2 CLOVES GARLIC CRUSHED<>2 TBS.OLIVE OIL<>1/2 cup LITTLE MACARONI or ORZO<>OPTIONAL, <>HANDFUL of CHERRY TOMATOES or SPINACH or KALE<>SALT&PEPPER to TASTE<><>GRATED PARMESAN CHEESE<><>CHOP HAM, ONION, and CELERY into little pieces and crush/chop the GARLIC<>THIS MIXTURE IS CALLED THE (battuto)<>HEAT THE OLIVE OIL in a large ,pot, ADD the (battuto) and SAUTE gently circa 8 minutes<>IT should yellow but not brown<>DRAIN the BEANS. (USING a BLENDER, FOOD PROCESSOR or FOOD MILL, (PUREE one can of bEANS and one can of STOCK and 1/2 the cooked (battuto)<>RETURN TO THE POT with remaining (battuto)ADD the rest of the BEANS and STOCK, stir together and HEAT)<>ADD the PASTA<>(at this point you may also ADD TOMATOES and/or GREENS)<>SIMMER gently until PASTA is COOKED<>SERVE WITH (GRATED PARMESAN ) sprinkle on (TOP of each BOWL)!!!!!!DELICIOUS HEARTY SOUP, goooD!!!!!
