AUTUMN PUMPKIN MUFFINS
1 CUP RAISINS<>1/2 CUP WATER<>soak together while measuring other ingredients<>1 cup canned PUMPKIN<>1 CUP plus 4 tbs. SUGAR<>2 EGGS<>1 tsp. SALT<>1/2 tsp. SODA<>3/4 tsp. CLOVES<>3/4 tsp. CINNAMON<>1/2 CUP plus 2 tbs. COOKING OIL<>1 3/4 CUPS FLOUR<>1 1/2 tsp. BAKING POWDER<><>MIX ALL INGREDIENTS TOGETHER and add HALF of the WATER RAISIN MIXTURE<>MIX WELL and add remaining water-raisin mixture<>MIX UNTIL SMOOTH and drop into well greased (MUFFIN or CUP CAKE PANS)<><>BAKE at 400 to 425 degrees for about 15 minutes, until top springs back when pressed with fingers.<><>MAKES about a dozen large MUFFINS or ONE LARGE LOAF)!!!!!AUTUMN PUMPKIN TREAT!!!!!!KIDS LOVE UM!!!!!PUT CANDY CORN ON TOP OF EACH MUFFIN!!!
