BANANA CREAM PIE (VELVETY SMOOTH)





MIX together 16 GRAHAM CRACKERS which have been rolled fine, 1/4 cup SUGAR and 1 TEASPOON CINNAMON.<>BLEND in 1/4 CUP SOFTENED BUTTER thoroughly.<>PRESS mixture firmly in an even layer against BOTTOM and SIDES of a 9 in PIE PLATE<>PLACE (BANANA slices in a single layer before (POURING in CREAM FILLING) SCALD 2 cups milk in top of DOUBLE BOILER<>MIX together well 1/4 cup SUGAR<>2 TEASPOONS. CORNSTARCH.<>1/4 TEASPOON SALT and add to MILK slowly, stirring (CONSTANTLY and COOKING MIXTURE until THICKENS)<>BEAT 3 EGG YOLKS<>and BLEND gradually into COOKED MIXTURE<>COOK 2 minutes LONGER STIRRING<>(COOL add 1 TEASPOON VANILLA)<>(POUR another LAYER of BANANA SLICES on TOP of FILLING) <><>(TOP with MERINGUE, made by BEATING 6 TABLESPOONS SUGAR into 3 STIFFLY (BEATEN EGG WHITES)<>BROWN in a 325 degree F OVEN for 20 minutes<><><><>(everyone will surely want "SECONDS"!!!!!!!!
