OLD FOLKS (PINEAPPLE RICE PUDDING)






DELIGHTFUL WAY TO MAKE (PINEAPPLE& RICE PUDDING) 1/2 CUP WHITE RICE<>1/2 CUP SUGAR<>1 CUP CRUSHED PINEAPPLE<>1 1/2 CUPS WATER<> 1 1/2 CUPS EVAPORATED MILK (CARNATION)<>2 EGGS<> 1/2 TEASPOON SALT<><>WASH RICE AND SOAK IN COLD WATER FOR AN HOUR.<>DRAIN, PUT INTO DOUBLE BOILER; ADD MILK DILUTED WITH ONE-HALF CUPS WATER; ADD SALT AND COOK UNTIL RICE IS SOFT.<>ADD SUGAR, EGG YOLKS, SLIGHTLY BEATEN, AND (GRATED PINEAPPLE). THEN FOLD IN THE STIFFLY BEATEN EGG WHITES, POUR INTO A BUTTERED BAKING DISH AND BAKE.<>TEMPERATURE 300F,degrees<>TIME 30 MINUTES<>YIELD 6 SERVINGS, (SERVE WITH WHIPPED CREAM)!!!! IT IS DELICIOUS!!!! (THE OLD FOLKS LOVED IT!!!!)
