OLD FASHIONED BAKED BEANS

1/2# soldier BEANS, or yellow eyed. They tell you the type of bean you use and seasoning is personal taste, I perfer the SOLDIER BEANS. Add 6 cups of water , 3/4 teaspoon soda, 1 medium chunk of salt pork with the lean, pinch or two black pepper,  SOAK BEANS OVERNIGHT IN WATER, and soda, In the morning pour off the water. Cover and bring beans to a boil, pour off (most cooks leave out this process), replace water and cook beans until tender. Place beans and water in baking dish, score pork and place in center, sprinkle with black pepper.Cook long enough for pork to be done and very little water remaining in pot 8 to 10 hours , When preparing beans  for oven Add 1 tablespoon brown sugar ,1 tablespoon dry mustard , 1 tablespoon salt, some people add 1/2 cup maple syrup, or 1/2 cup molasses,  It's  about personal taste some like beans sweet, other people just like GOOD OLD FASHIONED BEANS
