FARMHOUSE (HASH ****RED FLANNEL)
MADE WITH INGREDIENTS FROM THE FARM****IF YOU DON'T HAVE A SCALE, MEASURE IN CUPS---2 1/4 CUPS OF LIGHTLY PACKED MEAT CUBES WEIGH ABOUT A POUND.<><><><><>ON THE FARM ONE WOOD USE AN OLD METAL (MEAT GRINDER) shown below, BUT IN TODAY'S MODERN KITCHEN ONE USES A CUISINART FOOD PROCESSOR>I USE BOTH.<><>INGREDIENTS<>4 tablespoon BUTTER<>1 medium onion, peeled and halved<>1/2 lb. leftover BEEF, CUT IN 1in. PIECES<>1/2 lb. POTATOES, cut in --inch PIECES<>1 CUP SLICED RED BEETS<>SALT and PEPPER (FRESHLY GROUND)<>1/4 CUP BEEF or CHICKEN STOCK.<><><><>MELT HALF THE BUTTER IN A HEAVY SKILLET. TAKE ONION PUT THRU GRINDER, THEN ((SAUTE ONION)) in SKILLET UNTIL SOFT about 5 min.<><>RESERVE<><>THEN PUT (MEAT and POTATOES thru GRINDER<><>ADD SALT AND PEPPER TO INGREDIENTS,(MEAT)(POTATOES)(BEETS)(ONIONS)>?HEAT REMAINING (BUTTER) IN SKILLET OVER MEDIUM HEAT<>ADD ALL (HASH ingredients) POUR STOCK OVER ALL AND PAT DOWN GENTLY WITH (SPATULA)<>COOK OVER (LOW HEAT for 20 to 25 MINUTES<>TURNING MIXTURE OVER WITH SPATULA AS CRUST FORMS ON (BOTTOM of HASH) TRANSFER TO WARM SERVING DISH!!!! VERY TASTY!!
