BOSTON BAKED BEANS (with MAPLE SYRUP)


2 CUPS SOLDIER BEANS<><>1/2 teaspoon soda<><>1/1/2 lb. SALT PORK with rind<><>2 tsp.SALT)<><>1/1/4 teaspoon powdered MUSTARD<><>1/1/2 cup MAPLE SYRUP<><>1/2 cup brown SUGAR<>BOILING WATER<><> WASH AND PICK OVER BEANS. <><>SOAK ALL NIGHT IN WATER to cover.<><>IN THE MORNING BOIL IN SALTED WATER UNTIL TENDER ABOUT 20 MINUTES, (blow on bean if skin peels off bean they are ready) DURING LAST FEW MINUTES OF COOKING ADD SODA.<><> DRAIN<> SCORE PORK AND PLACE HALF OF THE PORK iN BOTTOM OF BEAN POT RIND SIDE DOWN<><>COVER WITH BEANS, ADD MUSTARD AND MAPLE SYRUP.<><>PLACE REMAINING PORK, RIND UP ON TOP AND FILL POT TO TOP WITH BOILING WATER.<><>BAKE IN SLOW OVEN 325degrees for 6 1/2 HOURS with cover on. REMOVE COVER  AND PUT  BACK 1 hour, MORE TO BROWN BEANS AND PORK.<><><><><><><><><><>SERVES6 to 8 generously!!!!!!!!
