ZUCCHINI or SUMMER SQUASH BREAD




MAKES 1 LOAF<>1 1/2 CUPS FLOUR<>2 TSPS. CINNAMON<>1 TSP. BAKING POWDER<>1 1/2 CUPS ZUCCHINI OR SUMMER SQUASH SHREDDED<>2 EGGS, WELL BEATEN<>3/4 CUPS SUGAR<>1/2 CUP VEGETABLE OIL<>2 TSPS. VANILLA EXTRACT<>1/2 CUPS CRUSHED WALNUTS<><>PREHEAT OVEN TO 350 DEGREES<><>(MIX FLOUR, CINNAMON, BAKING POWDER AND BAKING SODA TOGETHER) COMBINE WELL BEATEN EGGS, SUGAR, OIL AND VANILLA. (BEAT ABOUT 3 MINUTES.<>STIR IN SHREDDED SQUASH) ADD DRY INGREDIENTS AND CRUSHED WALNUTS<> MIX UNTIL DRY INGREDIENTS ARE MOISTENED.<>(THEN POUR ALL INTO A WELL-GREASED LOAF PAN). (BAKE 40 MINUTES or until TOOTHPICK PUT IN CENTER OF LOAF COMES OUT CLEAN.!!!( if you like SQUASH, ZUCCHINI or SUMMER SQUASH YOU WILL LIKE THIS!!!!!
