SWEET& SOUR BEETS (one pound of BEETS make 3-4 servings)




BEETS makes 4 SERVINGS, (SWEET AND SOUR BEETS) TAKE8 MEDIUM BEETS, COOKED SLICED<>3 TBSP. SUGAR<>GRATED PEEL AND JUICE OF 1 LEMON<>1/2 TSP. CARAWAY SEED<>1/4 TSP. SALT<>1/8 TSP GROUND CLOVES<>2 TBSPS. COLD WATER<> 1TBSPS. CORNSTARCH< > (1) AFTER COOKING, DRAIN THE LIQUID FROM THE BEETS INTO A SAUCEPAN, RESERVING BEETS<>(2) ADD, SUGAR, LEMON JUICE, CARAWAY SEED, SALT AND CLOVES, BRING TO A BOIL>(3) REDUCE HEAT AND SIMMER FOR A FEW MINUTES TO BLEND FLAVORS<>(4) GRADUALLY BLEND THE WATER INTO THE CORNSTARCH, ADD TO HOT LIQUID.(5) COOK OVER MEDIUM HEAT, STIRRING UNTIL THICKENED.(6 ADD) BEETS AND LEMON PEEL AND HEAT.<> BEETS CONTAIN 68 mcg.  (FOLATE) 1 1/2 CUP.
