SUMMER SQUASH CASSEROLE



INGREDIENTS<><>3-4 CUPS YELLOW SQUASH,SLICED<>1teaspoon SALT<>dash PEPPER to TASTE<>2 TABLESPOONS BUTTER<>1/3 CUP GRATED CHEESE<>1/8 teaspoon PAPRIKA<>8oz.SOUR CREAM<>1 TABLESPOON GRATED ONION<>1 TABLESPOON CHIVES, CHOPPED.<>1 pkg. BREAD CRUMBS<><>COOK SQUASH IN BOILING WATER, SALTED WATER UNTIL TENDER<>DRAIN WELL AND PLACE IN 2 1/2 QUART. CASSEROLE DISH<>COMBINE,<>SALT, PEPPER,(1 TABLESPOON BUTTER, CHEESE, PAPRIKA,ONION< AND SOUR CREAM AND STIR OVER LOW HEAT UNTIL CHEESE IS MELTED> REMOVE FROM HEAT.<>STIR IN EGGS YOLK AND CHIVES><>POUR MIXTURE OVER SQUASH< TOSS LIGHTLY> (SPRINKLE WITH BREAD CRUMBS and DOT WITH BUTTER<> BAKE, UNCOVERED, at 375 degrees for 15 MINUTES or until heated through and BUBBLING><>YIELDS--4 to 6 SERVINGS<>( "IF YOU HAVEN'T LIKED SQUASH, YOU'LL LOVE IT NOW!!")
