SALMON PEA WIGGLE (OLD FAVORITE on the FARM)




I don't know the origin of a wiggle, but it's still a comfort food, for many! I know my Aunt Julia and my Mom made it.<><>3 CUPS of favorite (WHITE SAUCE)<>1 large can of (RED or PINK SALMON,) spine ,bones and skin removed and BROKEN into LARGE CHUNKS<>10 oz. BAG (FROZEN PEAS)<>MILK for thining if needed<>SALT&PEPPER<>SALTINE CRACKERS, TOAST, or MASHED POTATOES<> <>MAKE a (THICK WHITE SAUCE) according to your favorite recipe<>CLEAN and BREAK up SALMON<>(ADD PEAS to WHITE SAUCE) and COOK until WARMED<>(ADD SALMON CHUNKS, WARM), SALT&PEPPER to TASTE<>THIN SAUCE IF NECESSARY.<>SERVE on (TOAST or CRACKERS or MASHED POTATOES)!!! (SOME PEOPLE CALL THIS "poor man's gravy")  it is a family favorite!! (IT IS FILLING)!!!

CRANBERRY APPLE PIE



2 1/2 CUPS CRANBERRIES CHOPPED<>1 1/2 CUPS APPLES CHOPPED<>1 1/2 CUPS SUGAR<>3 TABLESPOONS QUICK-COOKING TAPIOCA<>3 TABLESPOONS WATER<><>COMBINE CRANBERRIES, APPLES,SUGAR, TAPIOCA, AND WATER. LET STAND WHILE MAKING PASTRY.<>LINE A 9inch PIE PLATE. FILL (PIE PLATE with FRUIT MIXTURE) MAKE LATTICE TOP<>PLACE PASTRY STRIPS ON TOP OF FILLING< CRISSCROSSING STRIPS TO MAKE ATTRACTIVE OPEN TOP<>MOISTEN EDGE OF PIE< PLACING STRIP OF DOUGH< AROUND RIM TO HOLD STRIPS IN PLACE><>pinch into a fluted rim to hold strips in place.,.or press together with tines of fork.<>THEN (BAKE) in HOT OVEN 425 degreesF for 30--40 MINUTES.,.<>sooooo,YUMMY, (TOP  with WHIPPED CREAM)!!!!

COUNTRY DOUGHNUTS




4 CUPS SIFTED FLOUR<>1/2 TEASPOON NUTMEG<>1/4 TEASPOON CINNAMON<>1 TEASPOON SALT<>3/4 TEASPOON SODA<>1/2 TEASPOON CREAM of TARTER<>2 TABLESPOONS SPRY<>3/4 CUP SUGAR<>4 EGGS BEATEN or 2 EGGS and 1 EGG YOLK<>1 CUP THICK SOUR CREAM<>SIFT TOGETHER FLOUR, SPICES,SALT,SODA, and CREAM OF TARTER<>CREAM SPRY and SUGAR until well BLENDED.<>ADD EGG YOLKS and beat until mixture is light and fluffy.<>ADD MILK<>ADD sifted dry ingredients and mix thoroughly until smooth.<>with as little handling as possible, ROLL DOUGH on FLOURED BOARD to 1/4 inch thickness> LET DOUGH STAND stand 20 minutes<>CUT with 2 1/2 inch DOUGHNUT CUTTER><>FRY in DEEP SPRY (375 degreesF) until BROWN, turning when first crack appears><>DRAIN on ABSORBENT PAPERS<>THIS RECIPE MAKES 3 DOZEN!!!!!!To SUGAR DOUGHNUTS , COOL first then shake in a paper bag with granulated or confectioners' SUGAR<>GREAT FOR HALLOWEEN PARTY!!!!

DATE FILLED COOKIES (or you can use RAISINS)



DATE FILLED COOKIES<>1/2 CUP SPRY<>3/4 teaspoon SALT<>1 teaspoon VANILLA<>1 CUP SUGAR<>1 EGG well BEATEN<>3 CUPS sifted FLOUR<>3 teaspoons BAKING POWDER<>1/4 CUP MILK<>****DATE FILLING--1 CUP DATES, pitted and cut<>1/2 cup SUGAR<>1/4 cup WATER<><><>(COMBINE SPRY, SALT and VANILLA and BLEND)<>ADD SUGAR and CREAM WELL<>ADD BEATEN EGG and mix thoroughly<>SIFT FLOUR with baking powder.<>ADD to first mixture alternately with milk, blending thoroughly.<>CHILL DOUGH><>ROLL DOUGH 1/8 inch thick on floured board and cut with 2 inch COOKIE CUTTER.<><>****DATE FILLING<>COOK DATES, SUGAR and WATER over direct heat until thickened.<>STIRRING constantly. COOL<>PLACE 1 teaspoon on one COOKIE, place another COOKIE on TOP, and PRESS TOGETHER><>PRICK TOP of each COOKIE with FORK<>PLACE on BAKING SHEETS greased with SPRY.<>(BAKE in moderately HOT OVEN, (375 degrees F. for 15 minutes.<><>MAKES 2 dozen COOKIES.!!!!THEY'LL disappear like MAGIC so MAKE PLENTY!!!!

KAHLUA (PECAN PIE) A CLASSIC




KAHLUA  PECAN  PIE, a NEW ENGLAND CLASSIC<>1/4 cup BUTTER<>1/4 cup GRANULATED SUGAR<>1 TEASPOON VANILLA EXTRACT<>2 TBSP. FLOUR<>3 EGGS<>1/2 CUP KAHLUA<>1/2 CUP DARK CORN SYRUP<>3/4 CUP EVAPORATED MILK<>1 CUP WHOLE PECANS<>WHIPPED CREAM and PECAN HALVES (OPTIONAL) <><>(LINE A 9inch PIE PAN with your favorite PASTRY RECIPE)CHILL<>PREHEAT OVEN to 400 degreesF.<>(IN A LARGE BOWL,<>(CREAM TOGETHER BUTTER< SUGAR, VANILLA and FLOUR.<>(MIX WELL<>(BEAT IN EGGS  one at a time<>(STIR in KAHLUA, and CORN SYRUP and EVAPORATED MILK, then PECANS<>MIX WELL (POUR into PIE PAN)<>BAKE for 10 minutes<>THEN REDUCE HEAT TO 325 degrees F. and (BAKE until FIRM)<>ABOUT 40 minutes will be GOLDEN BROWN) then (CHILL pecan pie with kahula)<>GARNISH with pecan halves topped with WHIPPED CREAM) SooOH! OLD FAVORITE (BROWN BETTY)




INGREDIENTS<>1 CUP BROWN SUGAR<>1 CUP WATER<<>1/8 tsp. SALT<>GRATED RIND OF 1 ORANGE<>1/4 CUP SPRY, MELTED<>3 CUPS BREAD CRUMBS<>3 CUPS APPLES SLICED<><>1 tsp. LEMON JUICE<><>COMBINE SUGAR, WATER, SALT and ORANGE RIND and simmer 10 minutes<>MIX MELTED SPRY (OIL) with BREAD CRUMBS<>PLACE a LAYER in BAKING DISH GREASED with SPRY><>COVER with layer of APPLES, finishing with CRUMBS<>ADD LEMON JUICE to SIRUP<>POUR SIRUP OVER APPLES and CRUMBS<>(COVER and BAKE in moderate OVEN(350 degreesF. for 45 minutes)UNCOVER during last 15 minutes to BROWN<>SERVE WITH WHIPPED CREAM!!  (this is DELICIOUS) SERVES 8<>!!!!

GLAZED BAKED APPLES



4 LARGE (BAKING APPLES) GRANNY SMITH< CORTLAND< NORTHERN SPY< MACINTOSH) 1/2 CUP SEEDLESS RAISINS<>2 TABLESPOONS SUGAR<>1 TABLESPOON GRATED LEMON PEEL)<>1 TEASPOON CINNAMON<>2 TEASPOONS BUTTER<>2/3 CUP BOILING WATER<>1/2 CUP SUGAR<> 1/2 CUP RED CURRENT JELLY<><>SET OVEN for 350 degreesF><>WASH and CORE APPLES, pare 1/3 the way down from the stem<>PLACE in a BAKING DISH.<>COMBINE NEXT 4 ingredients.<>FILL centers of APPLES. <>TOP each with 1/2 teaspoon BUTTER><>COMBINE WATER and 1/2 cup SUGAR, POUR OVER APPLES<>(BAKE uncovered for 45 to 60 minutes or until tender<>BASTING once or TWICE with SYRUP in BOTTOM of PAN<>REMOVE FROM OVEN<>MELT JELLY over low heat, stir with a fork.<>SPOON over APPLES, PLACE in a broiler 3inches from heat<>broil 3-4 minutes until GLAZED<>SERVE WARM or cold, with WHIPPED CREAM!!!! this is an AUTUMN TREAT!!!!

1 CAN (20 ounces) PINEAPPLE CHUNKS in NATURAL JUICES<>1 PACKAGE (3-1/8 ounces) COOK and SERVE VANILLA PUDDING<>1 QUART MIXED (FRESH FRUIT CHUNKS) APPLES, BANANAS, ORANGES, PEARS,ETC)<>3/4 CUP CHOPPED PECANS or WALNUTS<>1/3 CUP FLAKED COCONUT<>WHIPPED TOPPING (optional)<>DRAIN PINEAPPLE, RESERVING JUICE<>IN A SAUCEPAN, (COMBINE PINEAPPLE JUICE and PUDDING MIX) COOK over MEDIUM HEAT until THICKENED)<>COOL<>COMBINE PINEAPPLE and OTHER FRUIT, NUTS and COCONUT in a LARGE SALAD BOWL and DRESSING and STIR TO COAT<>CHILL until READY TO SERVE<>GARNISH with (WHIPPED TOPPING) <><>YIELD 6-8 SERVINGS, <>DELICIOUS!!!!!THIS IS A PERFECT FRUIT SALAD TO PREPARE ALL WINTER LONG!! 3 1/2 POUNDS CORNED BEEF<>6 PARSNIPS<>9 CARROTS<>6 BEETS<>1 HEAD of CABBAGE<>6 POTATOES<>6 TURNIPS<><>SOAK (CORNED BEEF 15 minutes in COLD WATER) put in large POT<>POUR ON HOT WATER to COVER<>COOK 1 HOUR<>ADD (PARSNIPS and CARROTS and BEETS and TURNIPS)<>COOK 1 HOUR.<>ADD (POTATOES & CABBAGE)<>COOK 1 HOUR<>LIQUID in which it has been (COOKED in should be used as SOUP) SERVE with hot CATSUP and (FRENCH BREAD or ROLLS)  ****THIS IS A HEARTY MEAL on a CHILLY FALL DAY!!!!!

BAKING POWDER<>2 CUPS FLOUR<>PINCH of SALT<>2 TABLESPOONS SUGAR<>1, EGG BEATEN<>1 CUP MILK<>(TART APPLES PARED and SLICED, 4-5 APPLES) <>SIFT DRY INGREDIENTS TOGETHER<>ADD GRADUALLY (MILK and WELL BEATEN EGG)<>PARE and CUT APPLES in THIN SLICES or DICED)<>STIR or DIP APPLES IN BATTER for complete COATING<><>(DROP by SPOONFULS INTO DEEP FAT)<>FRY until BROWN in DEEP FAT at 370degrees for 3 minutes<>(SERVE with HOT MAPLE SYRUP or JELLY)  sooOH, DELICIOUS!!!!!!!
