CRUST, You can make your own or use PILLSBURY FROZEN PIE CRUST.<.FILLING FOR STRAWBERRY PIE<>2 PACKAGES (one 8 ounces, one 3 ounces) CREAM CHEESE, softened<>4 TABLESPOONS SUGAR<>1 1/2 QUART FRESH PICKED WHOLE STRAWBERRIES, divided<>2 SQUARES (1 OUNCE EACH) SEMISWEET CHOCOLATE, MELTED<>1 TABLESPOON FINELY CHOPPED (PISTACHIOS, PECANS or WALNUTS><>PUT CRUST IN BOTTOM OF A 9in. PIE PLATE<>DO NOT PRICK<>BAKE AT 400degreesF. for 12 to 15 minutes or until GOLDEN BROWN. INGREDIENTS--(2 lbs. YELLOW SUMMER SQUASH--young ONES)--(1/2 cup CHOPPED ONION) and (1 can condensed CREAM OF CHICKEN SOUP)--(1 CUP DAIRY SOUR CREAM)--(1 cup of SHREDDED CARROTS)--(8 oz. pkg. HERB SEASONED STUFFING MIX)--1/2 cup BUTTER MELTED<>IN SAUCEPAN COOK SLICED SQUASH AND CHOPPED ONION IN BOILING WATER FOR 5 min. (DRAIN) --COMBINE CHICKEN SOUP< SQUASH AND ONION.-(COMBINE STUFFING MIX AND BUTTER>(SPREAD HALF OF STUFFING MIXTURE IN BOTTOM OF A 12x17 1/2x2 inch BAKING DISH. SPOON VEGETABLE ON TOP. ALL ABOUT THE TOMATO!!






WITH ME IT"S ALL ABOUT THE TOMATOES!! THEY CAN BE STARTED FROM SEED OR FROM HOT-HOUSE STARTER PLANTS, MY TOMATO PLANTS HAVE BEEN IN THE GROUND SINCE APRIL 2011. I JUST LOVE TO GROW THEM, AND I ESPECIALLY LIKE TO EAT THEM FRESH OFF THE VINE. I MAKE GREAT BLT'S AND SPAGHETTI SAUCE, AND USE THEM IN LASAGNA AND SALADS WITH OLIVE OIL AND FETTA CHEESE> THE TOMATO IS SUCCULENT AND SOooo!! DELICIOUS. MY TOMATO PLANTS GROW NICE THICK STALKS AND LOOK NICE IN THE LAWN GARDEN AND ON MY DECK!!!  (I LOVE A GOOD TOMATO)!!!!

HOLSTEIN IN THE PASTURE





HOLSTEIN ARE THE MOST FREQUENTLY SEEN COWS IN VERMONT. THEY WEIGH 1350 lbs.  THEY GIVE AN AVERAGE AN AVERAGE OF 16.5 gals. or 55lbs OF MILK A DAY. THEIR COLOR IS BLACK WITH WHITE SPOTS, sometimes THEY are BROWN, RED with WHITE SPOTS. THEY ARE FREQUENTLY SEEN IN THE VERMONT COUNTRY SIDE?!!!!!!!

RIB ROAST & HORSERADISH SAUCE




2 tsp. EACH THYME, MARJORAM AND PEPPER<>3 CLOVES GARLIC (chopped)<>1/3 cup MAYONNAISE<>(1 --4 to 6 lb. BEEF RIB (EYE ROAST) small end<> 3 to 4 tsp. PREPARED HORSERADISH<>1 tbsp. CHOPPED CHIVES<> 1 cup whipping cream<><><>PREHEAT OVEN TO 350 degrees<>STIR TOGETHER THYME. MARJORAM, PEPPER AND GARLIC<> RUB OVER ALL SIDES OF (RIB ROAST) SEASON WITH SALT. PLACE (ROAST on a RACK in a shallow PAN.<> INSERT MEAT THERMOMETER in THICKEST PART OF (RIB ROAST)> ROAST FOR 1 3/4 to 2 1/4 HOURS or UNTIL THERMOMETER REGISTERS 140degreesF. for MEDIUM RARE<> REMOVE FROM PAN. (COVER WITH FOIL AND LET STAND 15 minutes BEFORE CARVING. TEMPERATURE WILL RISE TO 145degreesF. during STANDING. (MEANWHILE , COMBINE MAYONNAISE, HORSERADISH and CHIVES. WHIP CREAM, FOLD INTO MAYONNAISE MIXTURE, CHILL UNTIL SERVING TIME. (SERVE WITH RIB ROAST)  DELICIOUS!!!

1QUART BAY SCALLOPS<>6 MEDUIM POTATOES SLICED THINLY<>^ MEDIUM ONIONS SLICED THINLY<>SALT&PEPPER<>1 CUP MILK<>1/4 POUND BUTTER<> SmALL BOX SALTED SALTINES( CRUSHED FINE)  BUTTER A PYREX OR EARTHENWARE CASSEROLE DISH.<>PLACE IN LAYERS, (SCALLOPS) DO NOT SOAK OR WASH USE FRESH< IF POSSIBLE RIGHT FROM CONTAINER. POTATOES< ONIONS SALTINES AND A LIGHT DUST OF SALT AND PEPPER. (REPEAT LAYERS UNTIL ALL INGREDIENTS ARE USED) POUR MILK EVENLY OVER ALL AND DOT WITH ABOUT WALNUT SIZE PIECES OF BUTTER>PLACE IN PRE-HEATED 325 to 350 degree OVEN UNCOVERED for about AN HOUR or until POTATOES ARE COOKED!!!!!

TODAY PEOPLE MAKE THEM LOOK LIKE LITTLE FLOWER SHEDS!! THEY HAVE NAMES, (SQUAT and DROP to THE LONG WAY DOWN!!!

PEEL BANANAS, ALLOWING TWO PER SERVINGS> PLACE IN A BUTTERED FLAT CASSEROLE DISH. SPRINKLE WITH LEMON JUICE, ABOUT 1 TABLESPOON PER SERVING. BROWN SUGAR, ABOUT 1 TABLESPOON PER SERVING. ( GOLDEN RUM about 2 TABLESPOONS PER SERVING>DOT WITH BUTTER, (BAKE) UNCOVERED AT 350 degrees about 25 MINUTES. THE LIQUIDS THICKEN INTO A SAUCE AND IF THIS GETS TOO THICK, ADD MORE RUM DURING BAKING PERIOD> (SERVE HOT AS IS, OR WITH ICE CREAM OR WHIPPED CREAM>!!!
